| Abstract/Contents: | "The University of Michigan Waste Management Services and the City of Ann Arbor are running a pilot program to compost food residuals from three residence halls at the city's yard trimmings composting facility. This summer, kitchen staff are separating residuals such as fruit and vegetable peelings, lettuce leaves, coffeee grounds and egg shells. The program is only targeting food items currently in the waste stream. Most prep waste and plate scrapings are put in garbage disposal units. The food scraps are collected in wheeled carts, which are picked up by Grounds & Waste Management staff and delivered to the composting site....Dining Service kitchens generate 52 to 100 tons a year of prep food residuals." |
