Abstract/Contents:"Relatively little information is available on the control, regulation and mechanisms of fructan metabolism in the Gramineae family. This paper describes the influence of temperature on the synthesis and buildup of fructans. The time course for the conversion from a non-fructan synthesizing plant (grown at 15-20 d C) to a fructan synthesizing one (grown at 5-10 d C) will be discussed. Since elevated concentrations of sucrose preceed fructan accumulation, sucrose may have a regulatory role in inducing enzymes of fructan synthesis, i.e. SST (sucrose-sucrose 1-fructosyl transferase). The temperature sensitivity of the enzymes SST and FFT (fructan-fructan 1-fructyosyl transferase) were examined. Understanding the regulation of fructan biosynthesis and its relationship with sucrose synthesis will enhance our understanding of carbohydrate accumulation in grasses and out of the specific role of fructans in growth and development."
